Lyndon “Bubba” Sims, Executive Sous Chef


When Bubba puts his signature on something, it really sizzles. And for the past 15 years, guests of Caribe Royale have delighted in Bubba’s famous signature dishes, including Bubba’s wings and Bubba’s French toast. Prior to his tenure at Caribe Royale, Bubba spent a decade cooking for Grosvenor Resort and three years at Mission Inn Country Club. Today, Bubba shines as the executive sous chef, assisting with all culinary aspects of Caribe Royale. When Bubba isn’t using his talents at Caribe Royale, he volunteers with the food-focused charity, A Taste of Compassion, as well as putting on cooking demonstrations at local schools, inspiring children to eat healthy and cook from the heart.
